Jam Cookies
Ingredients:
- 1 cup (220 g) unsalted butter, at room temperature
- 1 cup (200 g) granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 1/2 cups (325 g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Jam of your choice
Instructions:
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add in the egg and vanilla extract, and mix until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Slowly add the dry ingredients into the butter mixture, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Using a cookie cutter, cut out desired shapes and place them onto the prepared baking sheet.
- Using a smaller cookie cutter or the back of a spoon, make a small indentation in the center of each cookie.
- Fill each indentation with a small amount of jam.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
