Jam Cookies

  1. In a large bowl, cream together butter and sugar until light and fluffy.
  2. Add in the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Slowly add the dry ingredients into the butter mixture, mixing until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
  8. Using a cookie cutter, cut out desired shapes and place them onto the prepared baking sheet.
  9. Using a smaller cookie cutter or the back of a spoon, make a small indentation in the center of each cookie.
  10. Fill each indentation with a small amount of jam.
  11. Bake for 10-12 minutes, or until the edges are golden brown.
  12. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
