Jam-Filled Doughnuts

  1. In a large mixing bowl, combine the flour, sugar, baking powder and salt.
  2. In a separate bowl, whisk together the milk, melted butter, egg and vanilla extract.
  3. Add the wet mixture to the dry mixture and stir until a dough forms.
  4. Knead the dough on a lightly floured surface for a few minutes until it becomes smooth and elastic.
  5. Roll out the dough to 1/4 inch thickness and use a cookie cutter or drinking glass to cut out circles.
  6. Place a teaspoon of jam in the center of half of the dough circles.
  7. Place another dough circle on top of the jam and press the edges to seal.
  8. In a large pot, heat the vegetable oil to 375 degrees Fahrenheit.
  9. Carefully place the doughnuts into the hot oil and fry for about 2-3 minutes per side or until golden brown.
  10. Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.
  11. Coat the warm doughnuts in sugar or a cinnamon-sugar mixture and serve immediately.
