Jam-Filled Doughnuts
Ingredients:
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup of your favorite jam
- Vegetable oil, for frying
- 1/4 cup sugar for coating
Instructions:
- In a large mixing bowl, combine the flour, sugar, baking powder and salt.
- In a separate bowl, whisk together the milk, melted butter, egg and vanilla extract.
- Add the wet mixture to the dry mixture and stir until a dough forms.
- Knead the dough on a lightly floured surface for a few minutes until it becomes smooth and elastic.
- Roll out the dough to 1/4 inch thickness and use a cookie cutter or drinking glass to cut out circles.
- Place a teaspoon of jam in the center of half of the dough circles.
- Place another dough circle on top of the jam and press the edges to seal.
- In a large pot, heat the vegetable oil to 375 degrees Fahrenheit.
- Carefully place the doughnuts into the hot oil and fry for about 2-3 minutes per side or until golden brown.
- Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.
- Coat the warm doughnuts in sugar or a cinnamon-sugar mixture and serve immediately.
