Jalapeno Poppers

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut jalapeno peppers in half lengthwise; remove seeds and membranes.
  3. In a mixing bowl, combine cream cheese, cheddar cheese, Monterey Jack cheese, cilantro, garlic powder, onion powder, salt, and pepper.
  4. Fill each jalapeno half with the cheese mixture.
  5. In a small bowl, mix together panko bread crumbs, flour, salt, and pepper.
  6. Dip each stuffed jalapeno first in the beaten eggs, then in the bread crumb mixture, coating evenly.
  7. In a large skillet, heat vegetable oil over medium-high heat.
  8. Fry the coated jalapenos in hot oil until golden brown, about 3-4 minutes per side.
  9. Place fried jalapenos on a baking sheet and bake in the preheated oven for 10-12 minutes, or until cheese is melted and bubbly.
