Jalapeno Poppers
Ingredients:
- 12 fresh jalapeno peppers
- 8 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 cup panko bread crumbs
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- Vegetable oil for frying
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Cut jalapeno peppers in half lengthwise; remove seeds and membranes.
- In a mixing bowl, combine cream cheese, cheddar cheese, Monterey Jack cheese, cilantro, garlic powder, onion powder, salt, and pepper.
- Fill each jalapeno half with the cheese mixture.
- In a small bowl, mix together panko bread crumbs, flour, salt, and pepper.
- Dip each stuffed jalapeno first in the beaten eggs, then in the bread crumb mixture, coating evenly.
- In a large skillet, heat vegetable oil over medium-high heat.
- Fry the coated jalapenos in hot oil until golden brown, about 3-4 minutes per side.
- Place fried jalapenos on a baking sheet and bake in the preheated oven for 10-12 minutes, or until cheese is melted and bubbly.
- Serve hot and enjoy your delicious jalapeno poppers
