Jalapeno Corn Casserole
Ingredients:
- 1 can (15.25 oz) whole kernel corn, drained
- 1 can (14.75 oz) cream style corn
- 1 box (8 oz) corn muffin mix
- 1/2 cup sour cream
- 1/4 cup melted butter
- 1-2 jalapeno peppers, seeded and diced
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9 inch casserole dish.
- In a large bowl, mix together the drained corn, cream style corn, corn muffin mix, sour cream, melted butter, diced jalapenos, and shredded cheese. Season with salt and pepper to taste.
- Pour the mixture into the prepared casserole dish and smooth out the top with a spatula.
- Bake for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
