Jalapeno Cheddar Cornbread

  1. Preheat oven to 375 degrees F (190 degrees C). Grease an 8x8 inch baking pan.
  2. In a mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt.
  3. Add shredded cheddar cheese and minced jalapeno peppers to the dry ingredients and mix well.
  4. In a separate bowl, mix together melted butter, milk, and beaten egg.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cornbread cool in the pan for 10 minutes before removing and serving.
