Jalapeno Cheddar Cornbread
Ingredients:
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
- 1/4 cup minced jalapeno peppers
- 1/3 cup unsalted butter, melted
- 1 cup milk
- 1 egg, beaten
Instructions:
- Preheat oven to 375 degrees F (190 degrees C). Grease an 8x8 inch baking pan.
- In a mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt.
- Add shredded cheddar cheese and minced jalapeno peppers to the dry ingredients and mix well.
- In a separate bowl, mix together melted butter, milk, and beaten egg.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cornbread cool in the pan for 10 minutes before removing and serving.
