Jalapeno Bagels
Ingredients:
- 1 tablespoon active dry yeast
- 1 1/2 cups warm water
- 1 tablespoon white sugar
- 4 cups bread flour
- 2 teaspoons salt
- 1/2 cup chopped pickled jalapeno peppers
- 1/4 cup cornmeal
- 1 egg, beaten
Instructions:
- In a large mixing bowl, dissolve the yeast in warm water and let stand for 5 minutes.
- Add in the sugar, bread flour, and salt. Mix until the dough comes together.
- Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl and cover with a clean towel. Let it rise for 1 hour.
- Preheat your oven to 400 degrees F (200 degrees C).
- Punch down the dough and roll into a long, thin log. Cut the log into 8 equal pieces.
- Press a jalapeno pepper into each piece of dough, then roll it into a ball, sealing the pepper inside.
- Place the dough balls on a baking sheet lined with parchment paper.
- Pour the cornmeal onto a flat surface and roll the dough balls in it.
- Place the dough balls back on the baking sheet and let them rise for another 15 minutes.
- Brush the tops of the dough balls with the beaten egg.
- Bake in the preheated oven for 20 minutes, until golden brown.
