Jalapeno Bagels

  1. In a large mixing bowl, dissolve the yeast in warm water and let stand for 5 minutes.
  2. Add in the sugar, bread flour, and salt. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl and cover with a clean towel. Let it rise for 1 hour.
  5. Preheat your oven to 400 degrees F (200 degrees C).
  6. Punch down the dough and roll into a long, thin log. Cut the log into 8 equal pieces.
  7. Press a jalapeno pepper into each piece of dough, then roll it into a ball, sealing the pepper inside.
  8. Place the dough balls on a baking sheet lined with parchment paper.
  9. Pour the cornmeal onto a flat surface and roll the dough balls in it.
  10. Place the dough balls back on the baking sheet and let them rise for another 15 minutes.
  11. Brush the tops of the dough balls with the beaten egg.
  12. Bake in the preheated oven for 20 minutes, until golden brown.
