Jackfruit Tacos

  1. Heat olive oil in a large pan over medium heat.
  2. Add onions and garlic, and cook until softened.
  3. Add bell pepper and jalapeno (if using), and cook until slightly softened.
  4. Add jackfruit, chili powder, cumin, paprika, and salt to the pan. Stir well to combine and evenly coat the jackfruit with the spices.
  5. Add 1/4 cup of water to the pan and stir. Let the mixture cook for another 5-7 minutes, stirring occasionally, until the jackfruit is softened and resembles pulled pork.
  6. Warm up tortillas in a separate pan or in the microwave.
  7. Assemble tacos by placing a couple spoonfuls of the jackfruit mixture onto a tortilla and topping with desired toppings.
  8. Serve and enjoy your delicious jackfruit tacos!
