Jackfruit Tacos
Ingredients:
- 1 can of jackfruit, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 jalapeno, diced (optional)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 cup water
- Tortillas
- Toppings: avocado, diced tomatoes, cilantro, lime wedges, etc.
Instructions:
- Heat olive oil in a large pan over medium heat.
- Add onions and garlic, and cook until softened.
- Add bell pepper and jalapeno (if using), and cook until slightly softened.
- Add jackfruit, chili powder, cumin, paprika, and salt to the pan. Stir well to combine and evenly coat the jackfruit with the spices.
- Add 1/4 cup of water to the pan and stir. Let the mixture cook for another 5-7 minutes, stirring occasionally, until the jackfruit is softened and resembles pulled pork.
- Warm up tortillas in a separate pan or in the microwave.
- Assemble tacos by placing a couple spoonfuls of the jackfruit mixture onto a tortilla and topping with desired toppings.
