Jackfruit BBQ Sandwich
Ingredients:
- 1 can of jackfruit in brine
- 1/4 cup BBQ sauce
- 1/4 cup vegetable broth
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp chili powder
- Salt and pepper to taste
- 4 buns or rolls of your choice
- Optional toppings: coleslaw, pickles, avocado slices
Instructions:
- Drain the jackfruit and rinse it well. Using your hands, shred the jackfruit into bite-sized pieces.
- In a large pan, combine the shredded jackfruit, BBQ sauce, vegetable broth, garlic powder, paprika, onion powder, chili powder, salt, and pepper. Mix well.
- Cook over medium-high heat for 10-15 minutes, stirring occasionally, until the jackfruit is soft and the sauce is thickened.
- Toast the buns or rolls in a toaster or in the oven until slightly crispy.
- Serve the jackfruit BBQ mixture on the toasted buns or rolls, and add any desired toppings.
