Italian Wedding Soup
Ingredients:
- 1 pound ground beef or pork
- 1/4 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 cup small pasta (such as orzo or ditalini)
- 2 cups baby spinach
Instructions:
- In a large bowl, mix together the ground beef or pork, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Form into small meatballs and set aside.
- In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the chicken broth and bring to a boil.
- Add the meatballs and pasta to the pot and simmer for 10 minutes, or until the meatballs are cooked through and the pasta is tender.
- Add the baby spinach and cook for an additional 2 minutes, until wilted.
