Italian Wedding Soup

  1. In a large bowl, mix together the ground beef or pork, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Form into small meatballs and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
  3. Add the chicken broth and bring to a boil.
  4. Add the meatballs and pasta to the pot and simmer for 10 minutes, or until the meatballs are cooked through and the pasta is tender.
  5. Add the baby spinach and cook for an additional 2 minutes, until wilted.
  6. Serve hot and enjoy your delicious Italian Wedding Soup!
