Israeli Salad
Ingredients:
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 small red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the diced tomatoes, cucumber, bell pepper, and red onion.
- Add in the chopped parsley and mint.
- In a separate small bowl, whisk together the lemon juice, olive oil, and salt and pepper to make the dressing.
- Pour the dressing over the vegetables and mix well.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
