Israeli Salad

  1. In a large bowl, combine the diced tomatoes, cucumber, bell pepper, and red onion.
  2. Add in the chopped parsley and mint.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, and salt and pepper to make the dressing.
  4. Pour the dressing over the vegetables and mix well.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
