Irish Stew

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the lamb and cook until browned on all sides.
  3. Add the onions and garlic and cook until softened.
  4. Add the carrots, celery, potatoes, thyme, salt, and pepper.
  5. Cover with beef broth and bring to a simmer.
  6. Cover and cook for 1 hour, stirring occasionally.
  7. Remove the lid and continue cooking for 30 minutes, or until the lamb is tender and the vegetables are cooked through.
