Irish Stew
Ingredients:
- 2 pounds lamb, cut into bite-sized chunks
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 1 stalk celery, chopped
- 4 potatoes, peeled and cubed
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- In a large pot, heat the vegetable oil over medium heat.
- Add the lamb and cook until browned on all sides.
- Add the onions and garlic and cook until softened.
- Add the carrots, celery, potatoes, thyme, salt, and pepper.
- Cover with beef broth and bring to a simmer.
- Cover and cook for 1 hour, stirring occasionally.
- Remove the lid and continue cooking for 30 minutes, or until the lamb is tender and the vegetables are cooked through.
