Irish Lamb Stew

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the lamb cubes and cook until browned on all sides, about 5 minutes.
  3. Remove the meat from the pot and set aside.
  4. In the same pot, add the chopped onion and carrots and cook until they begin to soften, about 5 minutes.
  5. Add the lamb back into the pot, along with the chopped potatoes, beef broth, Guinness beer, thyme, and salt and pepper.
  6. Bring the stew to a boil, then reduce heat to low and let it simmer for 1-2 hours, until lamb is tender.
  7. Taste and adjust seasonings as needed.
  8. Serve hot and enjoy your Irish Lamb Stew!
