Irish Lamb Stew
Ingredients:
- 2 pounds lamb meat, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- 2 cups beef broth
- 1 can of Guinness beer
- 2 teaspoons dried thyme
- Salt and pepper, to taste
Instructions:
- In a large pot, heat the olive oil over medium-high heat.
- Add the lamb cubes and cook until browned on all sides, about 5 minutes.
- Remove the meat from the pot and set aside.
- In the same pot, add the chopped onion and carrots and cook until they begin to soften, about 5 minutes.
- Add the lamb back into the pot, along with the chopped potatoes, beef broth, Guinness beer, thyme, and salt and pepper.
- Bring the stew to a boil, then reduce heat to low and let it simmer for 1-2 hours, until lamb is tender.
- Taste and adjust seasonings as needed.
- Serve hot and enjoy your Irish Lamb Stew!
