Irish Coddle
Ingredients:
- 1 pound potatoes, peeled and cubed
- 1 pound pork sausages, cut into bite-sized pieces
- 8 ounces bacon, chopped
- 2 onions, sliced
- 1 cup chicken broth
- 2 tablespoons parsley, chopped
- Salt and pepper to taste
Instructions:
- In a large pot, add the cubed potatoes, sausage pieces, chopped bacon, and sliced onions.
- Add chicken broth to cover all ingredients.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and let simmer for 45 minutes to an hour or until potatoes are tender.
- Stir in chopped parsley and let cook for an additional 5 minutes.
- Serve hot and enjoy your traditional Irish Coddle!
