Irish Coddle

  1. In a large pot, add the cubed potatoes, sausage pieces, chopped bacon, and sliced onions.
  2. Add chicken broth to cover all ingredients.
  3. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 45 minutes to an hour or until potatoes are tender.
  5. Stir in chopped parsley and let cook for an additional 5 minutes.
  6. Serve hot and enjoy your traditional Irish Coddle!
