Indian Curry

  1. In a large pot or dutch oven, heat the oil over medium heat.
  2. Add the onions, garlic, and ginger, and cook until softened.
  3. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for about 1 minute until fragrant.
  4. Add the chicken to the pot and cook until all sides are seared and browned.
  5. Pour in the chicken broth and diced tomatoes, and bring to a simmer.
  6. Cover the pot and let the curry simmer for about 15-20 minutes, until the chicken is cooked through.
  7. Stir in the coconut milk and let the curry simmer for another 5 minutes.
  8. Taste and add salt as needed.
  9. Garnish with cilantro before serving.
