Indian Curry
Ingredients:
- 2 tablespoons cooking oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon grated ginger
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 pound boneless chicken, cut into cubes
- 1 cup chicken broth
- 1 cup diced tomatoes
- 1 cup coconut milk
- Salt, to taste
- Cilantro, for garnish
Instructions:
- In a large pot or dutch oven, heat the oil over medium heat.
- Add the onions, garlic, and ginger, and cook until softened.
- Add the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for about 1 minute until fragrant.
- Add the chicken to the pot and cook until all sides are seared and browned.
- Pour in the chicken broth and diced tomatoes, and bring to a simmer.
- Cover the pot and let the curry simmer for about 15-20 minutes, until the chicken is cooked through.
- Stir in the coconut milk and let the curry simmer for another 5 minutes.
- Taste and add salt as needed.
- Garnish with cilantro before serving.
