Iced Lemon Cookies

  1. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Add in the eggs, one at a time, mixing well after each addition.
  3. Stir in the lemon juice and zest.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients in three parts, mixing until fully combined.
  6. Cover the dough and refrigerate for at least 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the dough on a floured surface to about 1/4 inch thickness.
  9. Cut out the desired shape of the cookies using a cookie cutter.
  10. Place the cookies on a lined baking sheet and bake for 8-10 minutes, or until lightly golden around the edges.
  11. Allow the cookies to cool completely before icing.
  12. To make the icing, mix together 1 cup of powdered sugar, 1 tbsp lemon juice, and 1 tsp lemon zest in a small bowl until smooth.
  13. Once the cookies are cool, spread the icing on top of each cookie using a small knife or offset spatula.
  14. Let the icing dry for about an hour before serving.
