Iced Lemon Cookies
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
Instructions:
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- Stir in the lemon juice and zest.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients in three parts, mixing until fully combined.
- Cover the dough and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface to about 1/4 inch thickness.
- Cut out the desired shape of the cookies using a cookie cutter.
- Place the cookies on a lined baking sheet and bake for 8-10 minutes, or until lightly golden around the edges.
- Allow the cookies to cool completely before icing.
- To make the icing, mix together 1 cup of powdered sugar, 1 tbsp lemon juice, and 1 tsp lemon zest in a small bowl until smooth.
- Once the cookies are cool, spread the icing on top of each cookie using a small knife or offset spatula.
- Let the icing dry for about an hour before serving.
