  1. Preheat your oven to 350°F (180°C).
  2. In a medium bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients with the wet ingredients, alternating with the milk.
  6. Roll the dough into small balls and place on a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes, or until the edges are firm.
  8. Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
  9. Scoop your favorite ice cream onto one cookie and top it with another cookie to create a sandwich.
  10. Wrap each ice cream sandwich tightly in plastic wrap and freeze for at least 1 hour.
