Hush Puppies
Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 cup diced onion
- 1/2 cup diced green pepper
- 1 egg, beaten
- 1/2 cup milk
- Vegetable oil for frying
Instructions:
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, salt, garlic powder, and cayenne pepper.
- Add in the diced onion and green pepper, and mix until well combined.
- In a separate bowl, whisk together the egg and milk.
- Pour the wet mixture into the dry mixture and stir until just combined.
- In a deep pot, heat vegetable oil over medium-high heat until it reaches 375 degrees Fahrenheit.
- Using a small ice cream scoop or spoon, carefully drop small spoonfuls of the hush puppy batter into the hot oil, working in batches to avoid overcrowding.
- Fry for 2-3 minutes or until golden brown, flipping occasionally to ensure even cooking.
- Remove from the oil and place on a paper towel-lined plate to drain excess oil.
- Serve hot and enjoy!
