Huevos Rancheros

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add diced onion, bell pepper, and jalapeno (if using) to the skillet and cook until softened, about 5 minutes.
  3. Add black beans, chili powder, cumin, salt, and pepper to the skillet and stir to combine.
  4. Crack the eggs into the skillet on top of the bean mixture and cook until desired doneness, about 3-4 minutes for a runny yolk.
  5. While the eggs are cooking, heat the tortillas in a separate skillet or in the microwave until warm.
  6. Place the warmed tortillas on plates and top each one with a spoonful of the bean mixture, spreading it out to cover the tortilla.
  7. Place a cooked egg on top of each tortilla and sprinkle with shredded cheese.
  8. Top with avocado slices and cilantro.
  9. Serve immediately with salsa on the side.
