Huevos Rancheros
Ingredients:
- 4 large eggs
- 1 can of black beans, drained and rinsed
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 jalapeno, diced (optional, for extra spice)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 corn tortillas
- 1/2 cup shredded cheddar cheese
- 1 avocado, sliced
- Fresh cilantro, chopped
- Salsa, for serving
Instructions:
- In a large skillet, heat the olive oil over medium heat.
- Add diced onion, bell pepper, and jalapeno (if using) to the skillet and cook until softened, about 5 minutes.
- Add black beans, chili powder, cumin, salt, and pepper to the skillet and stir to combine.
- Crack the eggs into the skillet on top of the bean mixture and cook until desired doneness, about 3-4 minutes for a runny yolk.
- While the eggs are cooking, heat the tortillas in a separate skillet or in the microwave until warm.
- Place the warmed tortillas on plates and top each one with a spoonful of the bean mixture, spreading it out to cover the tortilla.
- Place a cooked egg on top of each tortilla and sprinkle with shredded cheese.
- Top with avocado slices and cilantro.
- Serve immediately with salsa on the side.
