Hot and Sour Soup

  1. In a large pot, bring chicken broth to a boil.
  2. Add chicken, mushrooms, bamboo shoots, water chestnuts, and green onions to the pot.
  3. In a small bowl, mix together soy sauce, rice vinegar, chili paste, and white pepper. Pour into the pot and stir.
  4. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Slowly pour into the pot, stirring constantly.
  5. Let soup simmer for 5 minutes.
  6. Slowly pour in the beaten eggs, stirring gently to create strands of egg in the soup.
  7. Add chopped cilantro and stir to combine.
  8. Serve hot and enjoy your delicious hot and sour soup!
