Hot and Sour Soup
Ingredients:
- 6 cups chicken broth
- 1 cup shredded cooked chicken
- 1 cup sliced shiitake mushrooms
- 1 cup sliced bamboo shoots
- 1 cup sliced water chestnuts
- 1/2 cup sliced green onions
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili paste
- 1 teaspoon ground white pepper
- 2 tablespoons cornstarch
- 2 large eggs, lightly beaten
- 1/4 cup chopped cilantro
Instructions:
- In a large pot, bring chicken broth to a boil.
- Add chicken, mushrooms, bamboo shoots, water chestnuts, and green onions to the pot.
- In a small bowl, mix together soy sauce, rice vinegar, chili paste, and white pepper. Pour into the pot and stir.
- In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Slowly pour into the pot, stirring constantly.
- Let soup simmer for 5 minutes.
- Slowly pour in the beaten eggs, stirring gently to create strands of egg in the soup.
- Add chopped cilantro and stir to combine.
- Serve hot and enjoy your delicious hot and sour soup!
