Horchata
Ingredients:
- 1 cup long grain white rice
- 3 cups water
- 2 cinnamon sticks
- 1 cup milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Ground cinnamon for serving (optional)
Instructions:
- In a large bowl, soak the rice and cinnamon sticks in 3 cups of water for at least 3 hours or overnight.
- Once soaked, pour the rice and cinnamon mixture into a blender and blend until smooth.
- Strain the mixture through a fine mesh strainer or cheesecloth into a pitcher to remove any excess rice grains.
- Add the milk, sugar, and vanilla extract to the pitcher and stir until well combined.
- Chill the horchata in the refrigerator for at least 1 hour before serving.
- When ready to serve, pour the horchata into glasses and sprinkle with ground cinnamon, if desired.
