Horchata

  1. In a large bowl, soak the rice and cinnamon sticks in 3 cups of water for at least 3 hours or overnight.
  2. Once soaked, pour the rice and cinnamon mixture into a blender and blend until smooth.
  3. Strain the mixture through a fine mesh strainer or cheesecloth into a pitcher to remove any excess rice grains.
  4. Add the milk, sugar, and vanilla extract to the pitcher and stir until well combined.
  5. Chill the horchata in the refrigerator for at least 1 hour before serving.
  6. When ready to serve, pour the horchata into glasses and sprinkle with ground cinnamon, if desired.
