Instructions:

  1. In a large pot, cover the black-eyed peas with water and let soak overnight.
  2. In a large skillet, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  3. In the same skillet, sauté onion, green bell pepper, and garlic until tender.
  4. Drain the soaked peas and add to the skillet with the onion mixture.
  5. Add Cajun seasoning, salt, and black pepper to the skillet and stir to combine.
  6. Add 4 cups of water and bring to a boil. Reduce heat and simmer for 1 hour or until the peas are tender.
  7. In a separate pot, bring chicken broth to a boil and add rice. Reduce heat, cover, and simmer for 18 minutes.
  8. Mix the cooked rice and bacon into the pea mixture and simmer for an additional 5 minutes.
  9. Remove from heat and let stand for 5 minutes before serving.
