Hoppin' John
Ingredients:
- 1 pound dried black-eyed peas
- 4 slices bacon, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups water
- 1 cup long-grain white rice
- 2 cups chicken broth
Instructions:
- In a large pot, cover the black-eyed peas with water and let soak overnight.
- In a large skillet, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same skillet, sauté onion, green bell pepper, and garlic until tender.
- Drain the soaked peas and add to the skillet with the onion mixture.
- Add Cajun seasoning, salt, and black pepper to the skillet and stir to combine.
- Add 4 cups of water and bring to a boil. Reduce heat and simmer for 1 hour or until the peas are tender.
- In a separate pot, bring chicken broth to a boil and add rice. Reduce heat, cover, and simmer for 18 minutes.
- Mix the cooked rice and bacon into the pea mixture and simmer for an additional 5 minutes.
- Remove from heat and let stand for 5 minutes before serving.
