Honey Cake
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/4 cup chopped nuts (optional)
- 1/4 cup raisins (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, mix together melted butter, honey, eggs, and vanilla extract until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Gently stir in buttermilk until batter is smooth. If desired, fold in chopped nuts and raisins.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove from pan and cool completely on a wire rack.
