Honey Cake

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, mix together melted butter, honey, eggs, and vanilla extract until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Gently stir in buttermilk until batter is smooth. If desired, fold in chopped nuts and raisins.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then remove from pan and cool completely on a wire rack.
