Hollandaise Sauce
Ingredients:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- Pinch of cayenne pepper
- Salt and pepper to taste
Instructions:
- In a small saucepan, heat the egg yolks and lemon juice over low heat, whisking constantly.
- Gradually pour in the melted butter, continuing to whisk until the sauce thickens.
- Remove from heat and add cayenne pepper, salt, and pepper to taste.
- Serve immediately over eggs Benedict, steamed vegetables, or your choice of dish.
