Herb Roasted Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Remove the giblets from the chicken and rinse the chicken inside and out with cold water.
  3. Pat the chicken dry with paper towels.
  4. In a small bowl, mix together the melted butter, minced garlic, chopped herbs, salt, and pepper.
  5. Spread the herb mixture all over the chicken, including under the skin.
  6. Place the lemon wedges inside the chicken's cavity.
  7. Tuck the wings behind the back of the chicken and tie the legs together with kitchen twine.
  8. Place the chicken in a roasting pan breast side up.
  9. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  10. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  11. Serve with your favorite sides and enjoy!
