Herb Roasted Chicken
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1/4 cup unsalted butter, melted
- 4 cloves of garlic, minced
- 1 tablespoon fresh chopped rosemary
- 1 tablespoon fresh chopped thyme
- 1 tablespoon fresh chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, cut into wedges
Instructions:
- Preheat your oven to 375°F (190°C).
- Remove the giblets from the chicken and rinse the chicken inside and out with cold water.
- Pat the chicken dry with paper towels.
- In a small bowl, mix together the melted butter, minced garlic, chopped herbs, salt, and pepper.
- Spread the herb mixture all over the chicken, including under the skin.
- Place the lemon wedges inside the chicken's cavity.
- Tuck the wings behind the back of the chicken and tie the legs together with kitchen twine.
- Place the chicken in a roasting pan breast side up.
- Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
- Serve with your favorite sides and enjoy!
