Hash
Ingredients:
- 2 large potatoes
- 1 onion
- 1 green bell pepper
- 1 red bell pepper
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 4 eggs
Instructions:
- Peel and dice 2 large potatoes into small cubes.
- Chop 1 onion, 1 green bell pepper, and 1 red bell pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Add the chopped onions and peppers to the skillet with the potatoes and continue to cook for an additional 10 minutes, or until the vegetables are soft.
- Season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika. Stir well to evenly distribute the seasoning.
- In a separate skillet, cook 4 eggs to your desired level of doneness.
- Serve the hash topped with the cooked eggs.
