  1. Peel and dice 2 large potatoes into small cubes.
  2. Chop 1 onion, 1 green bell pepper, and 1 red bell pepper.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  4. Add the diced potatoes to the skillet and cook for 5 minutes, stirring occasionally.
  5. Add the chopped onions and peppers to the skillet with the potatoes and continue to cook for an additional 10 minutes, or until the vegetables are soft.
  6. Season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika. Stir well to evenly distribute the seasoning.
  7. In a separate skillet, cook 4 eggs to your desired level of doneness.
  8. Serve the hash topped with the cooked eggs.
