Grilled Vegetables

  1. Preheat your grill to medium-high heat.
  2. Cut the red and yellow bell peppers into thick strips.
  3. Slice the zucchini and eggplant into 1/4 inch thick rounds.
  4. Cut the red onion into wedges.
  5. In a small bowl, mix together the olive oil, minced garlic, dried thyme, and dried rosemary.
  6. Brush the vegetables with the oil mixture and season with salt and pepper.
  7. Place the vegetables on the grill and cook for 4-5 minutes per side, or until they are tender and have grill marks.
  8. Remove the vegetables from the grill and let them cool for a few minutes.
  9. Serve the grilled vegetables on a platter and enjoy!
