Grilled Vegetables
Ingredients:
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 eggplant
- 1 red onion
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions:
- Preheat your grill to medium-high heat.
- Cut the red and yellow bell peppers into thick strips.
- Slice the zucchini and eggplant into 1/4 inch thick rounds.
- Cut the red onion into wedges.
- In a small bowl, mix together the olive oil, minced garlic, dried thyme, and dried rosemary.
- Brush the vegetables with the oil mixture and season with salt and pepper.
- Place the vegetables on the grill and cook for 4-5 minutes per side, or until they are tender and have grill marks.
- Remove the vegetables from the grill and let them cool for a few minutes.
- Serve the grilled vegetables on a platter and enjoy!
