Greek Lemon Chicken
Ingredients:
- 4 boneless chicken breast halves
- 1/2 cup lemon juice
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions:
- In a small bowl, mix together the lemon juice, olive oil, minced garlic, oregano, and thyme.
- Pour the marinade into a large resealable plastic bag.
- Add the chicken breasts to the bag, seal, and marinate in the refrigerator for at least 1 hour, or overnight if possible.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the remaining marinade.
- Season the chicken with salt and pepper to taste.
- Grill the chicken for about 5-6 minutes on each side, or until fully cooked and no longer pink in the center.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Serve warm with your favorite side dishes and enjoy!
