Granola Bars

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the rolled oats, chopped almonds, and salt.
  3. In a small saucepan, heat the honey, maple syrup, almond butter, and vanilla extract over low heat until everything is well combined and the mixture is smooth.
  4. Pour the warmed mixture over the dry ingredients and mix until everything is evenly coated.
  5. Gently fold in the dried cranberries and mini chocolate chips.
  6. Press the mixture into the prepared pan, using a spatula or your hands to pack it down firmly.
  7. Bake for 20-25 minutes, or until the edges are golden brown.
  8. Let the granola bars cool in the pan for 10 minutes before lifting them out and cutting them into squares.
