Goulash Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound beef stew meat, cut into cubes
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- 1 red bell pepper, diced
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 6 cups beef broth
- 1 cup diced tomatoes
- Salt and pepper, to taste
- Sour cream and chopped fresh parsley for serving (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened, about 5 minutes.
- Add the beef stew meat to the pot and cook until browned on all sides.
- Stir in the paprika, caraway seeds, and dried thyme, and cook for 1 minute.
- Add the bell pepper, carrots, and potatoes to the pot and mix well.
- Pour in the beef broth and diced tomatoes, and bring the soup to a boil. Reduce heat to low, cover, and simmer for 1 hour, or until the meat is tender.
- Season with salt and pepper to taste. Serve hot with a dollop of sour cream and chopped fresh parsley, if desired.
