Gingerbread Cookies

  1. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
  2. In a large bowl, beat together the butter and brown sugar until light and fluffy.
  3. Add in the molasses, egg, and vanilla extract, and mix until well combined.
  4. Sift in the dry ingredients and mix until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat your oven to 350°F (175°C).
  7. Line a baking sheet with parchment paper.
  8. Remove the dough from the refrigerator and let it sit at room temperature for about 10 minutes.
  9. Roll out the dough on a floured surface to about 1/4 inch thickness.
  10. Use cookie cutters to cut out desired shapes.
  11. Place the cookies onto the prepared baking sheet and sprinkle with granulated sugar.
  12. Bake for 8-10 minutes, or until the edges are lightly golden brown.
