Ginger Ale
Ingredients:
- 1 cup fresh ginger, peeled and grated
- 1 cup sugar
- 1/4 cup honey
- 1/4 cup lemon juice
- 1/4 teaspoon active dry yeast
- 3 cups cold water
Instructions:
- In a small saucepan, combine the grated ginger, sugar, honey, and lemon juice. Heat on medium heat, stirring until the sugar is dissolved.
- Let the mixture cool to room temperature, then strain it through a fine-mesh strainer into a large pitcher. Discard the solids.
- In a small bowl, dissolve the yeast in 1/4 cup of lukewarm water. Let it sit for 5 minutes until it becomes foamy.
- Add the yeast mixture to the pitcher and stir to combine.
- Add 3 cups of cold water to the pitcher and stir again. Cover the pitcher and refrigerate for at least 24 hours.
- When ready to serve, strain the ginger ale through a fine-mesh strainer into glasses filled with ice.
- Garnish with lemon slices or fresh ginger if desired.
