Ginger Ale

  1. In a small saucepan, combine the grated ginger, sugar, honey, and lemon juice. Heat on medium heat, stirring until the sugar is dissolved.
  2. Let the mixture cool to room temperature, then strain it through a fine-mesh strainer into a large pitcher. Discard the solids.
  3. In a small bowl, dissolve the yeast in 1/4 cup of lukewarm water. Let it sit for 5 minutes until it becomes foamy.
  4. Add the yeast mixture to the pitcher and stir to combine.
  5. Add 3 cups of cold water to the pitcher and stir again. Cover the pitcher and refrigerate for at least 24 hours.
  6. When ready to serve, strain the ginger ale through a fine-mesh strainer into glasses filled with ice.
  7. Garnish with lemon slices or fresh ginger if desired.
