General Tso's Chicken
Ingredients:
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 1/4 cup sugar
- 1 tablespoon Chinese cooking wine or dry sherry
- 2 teaspoons red chili flakes
- 1 teaspoon sesame oil
- Sliced green onions and sesame seeds for garnish (optional)
Instructions:
- In a small bowl, mix together cornstarch and chicken until all pieces are evenly coated.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add chicken to skillet and cook until golden brown and crisp, about 5 minutes.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and ginger and cook for 1-2 minutes until fragrant.
- Add rice vinegar, soy sauce, sugar, Chinese cooking wine, and red chili flakes to the skillet.
- Bring to a simmer and cook for 2-3 minutes until sauce thickens slightly.
- Add sesame oil and stir to combine.
- Return chicken to skillet and toss with the sauce until evenly coated.
- Reduce heat to medium-low and let cook for an additional 5 minutes.
- Remove from heat and let sit for 5 minutes to allow sauce to thicken.
