General Tso's Chicken

  1. In a small bowl, mix together cornstarch and chicken until all pieces are evenly coated.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add chicken to skillet and cook until golden brown and crisp, about 5 minutes.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add garlic and ginger and cook for 1-2 minutes until fragrant.
  6. Add rice vinegar, soy sauce, sugar, Chinese cooking wine, and red chili flakes to the skillet.
  7. Bring to a simmer and cook for 2-3 minutes until sauce thickens slightly.
  8. Add sesame oil and stir to combine.
  9. Return chicken to skillet and toss with the sauce until evenly coated.
  10. Reduce heat to medium-low and let cook for an additional 5 minutes.
  11. Remove from heat and let sit for 5 minutes to allow sauce to thicken.
