Gazpacho

Instructions:

  1. Wash and chop the tomatoes, cucumber, red bell pepper, and red onion.
  2. Peel and mince the garlic cloves.
  3. In a blender, add the chopped vegetables, garlic, tomato juice, red wine vinegar, olive oil, salt, black pepper, and cayenne pepper. Blend until smooth.
  4. If desired, strain the mixture through a fine mesh strainer to remove any chunks.
  5. Refrigerate the gazpacho for at least an hour to allow the flavors to blend and chill.
  6. Before serving, dice the avocado and sprinkle it on top as a garnish (optional).
