Gazpacho
Ingredients:
- 6 ripe tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 small red onion
- 2 cloves of garlic
- 3 cups tomato juice
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 avocado for garnish (optional)
Instructions:
- Wash and chop the tomatoes, cucumber, red bell pepper, and red onion.
- Peel and mince the garlic cloves.
- In a blender, add the chopped vegetables, garlic, tomato juice, red wine vinegar, olive oil, salt, black pepper, and cayenne pepper. Blend until smooth.
- If desired, strain the mixture through a fine mesh strainer to remove any chunks.
- Refrigerate the gazpacho for at least an hour to allow the flavors to blend and chill.
- Before serving, dice the avocado and sprinkle it on top as a garnish (optional).
