Gator Bites

  1. In a mixing bowl, combine ground alligator meat, onion, bell pepper, celery, garlic, Cajun seasoning, breadcrumbs, and beaten egg. Mix well.
  2. Shape mixture into bite-size balls and roll in flour to coat.
  3. In a deep skillet, heat oil over medium-high heat. Fry gator bites in batches for 2-3 minutes or until golden brown, turning occasionally.
  4. Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
  5. Serve hot as a tasty appetizer or part of a main course.
