Garlic Chicken

  1. In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, salt, and black pepper. Mix well.
  2. Place the chicken breasts in the marinade and toss to coat. Cover and marinate in the refrigerator for at least 1 hour.
  3. Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  4. Add the marinated chicken breasts to the skillet and cook for about 6-7 minutes per side, or until cooked through.
  5. Remove the chicken from the skillet and set aside on a plate.
  6. In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping any browned bits from the bottom of the pan.
  7. Simmer for 2-3 minutes until the sauce thickens a bit.
  8. Add the chicken back to the skillet and spoon the sauce over the chicken.
  9. Cook for an additional 1-2 minutes until heated through.
  10. Serve the garlic chicken over rice or with your favorite side dish.
