Garlic Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1/4 cup chicken broth
- 1 lemon, juiced
Instructions:
- In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, salt, and black pepper. Mix well.
- Place the chicken breasts in the marinade and toss to coat. Cover and marinate in the refrigerator for at least 1 hour.
- Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
- Add the marinated chicken breasts to the skillet and cook for about 6-7 minutes per side, or until cooked through.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping any browned bits from the bottom of the pan.
- Simmer for 2-3 minutes until the sauce thickens a bit.
- Add the chicken back to the skillet and spoon the sauce over the chicken.
- Cook for an additional 1-2 minutes until heated through.
- Serve the garlic chicken over rice or with your favorite side dish.
