Funnel Cake
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 2 large eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
- Oil for frying
- Confectioners' sugar for dusting
Instructions:
- In a medium mixing bowl, combine the flour, baking powder, salt, and sugar.
- In a separate mixing bowl, beat the eggs and add in the milk and vanilla extract.
- Add the wet ingredients to the dry ingredients and whisk until smooth.
- In a large deep skillet, heat about 2 inches of oil over medium-high heat until it reaches about 375 degrees Fahrenheit.
- Using a funnel with a wide opening, pour the batter into the funnel, covering the hole with your finger. Place the funnel directly above the hot oil and release your finger, moving the funnel in a circular motion to create a spiral of batter.
- Fry for about 2-3 minutes, flipping once, until both sides are golden brown.
- Remove the funnel cake from the oil and place on a paper towel-lined plate to drain excess oil.
- Dust with confectioners' sugar and serve warm.
