Funnel Cake

  1. In a medium mixing bowl, combine the flour, baking powder, salt, and sugar.
  2. In a separate mixing bowl, beat the eggs and add in the milk and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and whisk until smooth.
  4. In a large deep skillet, heat about 2 inches of oil over medium-high heat until it reaches about 375 degrees Fahrenheit.
  5. Using a funnel with a wide opening, pour the batter into the funnel, covering the hole with your finger. Place the funnel directly above the hot oil and release your finger, moving the funnel in a circular motion to create a spiral of batter.
  6. Fry for about 2-3 minutes, flipping once, until both sides are golden brown.
  7. Remove the funnel cake from the oil and place on a paper towel-lined plate to drain excess oil.
  8. Dust with confectioners' sugar and serve warm.
