Fudge Recipe

  1. In a medium saucepan, combine the sugar, butter, heavy cream, and cocoa powder over medium heat.
  2. Stir constantly until the mixture comes to a boil.
  3. Attach a candy thermometer to the side of the saucepan and continue to cook until the mixture reaches 238°F (soft ball stage).
  4. Remove from heat and stir in the vanilla extract and salt.
  5. Let the mixture cool for 5-10 minutes without stirring. This will allow it to thicken.
  6. Once cooled, beat the mixture with a wooden spoon or mixer until it becomes thick and creamy.
  7. Pour the fudge into a greased 8x8 inch pan and let it cool for 1-2 hours at room temperature.
  8. Once cooled and set, cut into small squares and enjoy!
