Fried Rice
Ingredients:
- 3 cups cooked white rice
- 1 tablespoon oil
- 1 onion, diced
- 1 clove garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 1/4 cup soy sauce
- 1/4 teaspoon black pepper
- Optional: 1 cup cooked chicken or shrimp
Instructions:
- In a large pan or wok, heat the oil over medium heat.
- Add the onion and garlic and cook until softened.
- Add the mixed vegetables and cook until they start to soften.
- Push the vegetables to one side of the pan and add the beaten eggs to the other side.
- Scramble the eggs and mix them with the vegetables.
- Add the cooked rice to the pan and mix well with the vegetables and eggs.
- Add soy sauce and black pepper and stir to evenly coat the rice.
- If desired, add cooked chicken or shrimp at this point and mix well.
- Cook for an additional 2-3 minutes, until everything is heated through.
- Serve hot and enjoy your homemade fried rice!
