Fried Rice

  1. In a large pan or wok, heat the oil over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Add the mixed vegetables and cook until they start to soften.
  4. Push the vegetables to one side of the pan and add the beaten eggs to the other side.
  5. Scramble the eggs and mix them with the vegetables.
  6. Add the cooked rice to the pan and mix well with the vegetables and eggs.
  7. Add soy sauce and black pepper and stir to evenly coat the rice.
  8. If desired, add cooked chicken or shrimp at this point and mix well.
  9. Cook for an additional 2-3 minutes, until everything is heated through.
  10. Serve hot and enjoy your homemade fried rice!
