French Dip Sandwich

  1. In a slow cooker, add beef roast, sliced onions, minced garlic, beef broth, soy sauce, thyme, rosemary, and black pepper. Cook on low for 8 hours or on high for 4 hours.
  2. Remove beef from slow cooker and shred using two forks.
  3. Strain the liquids from the slow cooker into a separate container. You will use this for dipping sauce.
  4. Preheat a skillet over medium heat.
  5. Spread butter on the inside of each French roll or baguette and place in the skillet to toast until lightly browned.
  6. Add shredded beef to the skillet and pour a few tablespoons of the reserved cooking liquid over the beef to keep it moist.
  7. Top each roll or baguette with two slices of provolone cheese and allow it to melt.
  8. Serve the French dip sandwiches with the reserved cooking liquid on the side for dipping.
