French Dip Sandwich
Ingredients:
- 2 lbs beef roast
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup soy sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp black pepper
- 8 slices provolone cheese
- 8 French rolls or baguette
Instructions:
- In a slow cooker, add beef roast, sliced onions, minced garlic, beef broth, soy sauce, thyme, rosemary, and black pepper. Cook on low for 8 hours or on high for 4 hours.
- Remove beef from slow cooker and shred using two forks.
- Strain the liquids from the slow cooker into a separate container. You will use this for dipping sauce.
- Preheat a skillet over medium heat.
- Spread butter on the inside of each French roll or baguette and place in the skillet to toast until lightly browned.
- Add shredded beef to the skillet and pour a few tablespoons of the reserved cooking liquid over the beef to keep it moist.
- Top each roll or baguette with two slices of provolone cheese and allow it to melt.
- Serve the French dip sandwiches with the reserved cooking liquid on the side for dipping.
