Florida Spiny Lobster
Ingredients:
- 2 Florida Spiny Lobsters (about 1-1.5 lbs each)
- 1 stick of butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat grill to medium-high heat.
- While the grill is heating, prepare the lobsters by splitting them in half lengthwise with a sharp knife.
- In a small saucepan, melt the stick of butter over medium heat. Add in the minced garlic, chopped parsley, lemon juice, salt, and pepper. Cook for 2-3 minutes, stirring occasionally.
- Place the lobster halves on the grill, flesh side down. Brush the garlic butter mixture over the flesh of the lobster.
- Cover the grill and cook the lobster for 6-7 minutes. Carefully flip the lobster halves over and brush with more of the garlic butter mixture.
- Cover and cook for an additional 6-7 minutes, or until the lobster meat is opaque and cooked through.
- Remove from the grill and serve immediately with the remaining garlic butter mixture for dipping.
