Florida Avocado and Crab Salad
Ingredients:
- 1 large Florida avocado, diced
- 1 lb of lump crab meat
- 1 small red onion, diced
- 1 cup of cherry tomatoes, halved
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh cilantro
- 1 lemon, juiced
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the diced avocado, crab meat, red onion, cherry tomatoes, parsley, and cilantro.
- In a separate small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste.
- Pour the dressing over the crab and avocado mixture and gently toss to coat.
- Serve the salad immediately or refrigerate until ready to serve.
