Fish Tacos with Mango Salsa

  1. Preheat oven to 375°F. Season fish fillets with chili powder, cumin, garlic powder, and salt on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add fish fillets and cook for 3-4 minutes on each side, until fully cooked. Remove from heat and let cool for a few minutes. Once cooled, flake the fish into small pieces with a fork.
  3. Place tortillas on a baking sheet and warm in the oven for 2-3 minutes.
  4. To make the mango salsa, mix together diced mango, red onion, jalapeno, cilantro, lime juice, and salt and pepper to taste.
  5. To assemble tacos, place some flaked fish on each warmed tortilla. Top with mango salsa and any desired toppings.
  6. Serve immediately and enjoy!
