Fish Tacos with Mango Salsa
Ingredients:
- 1 lb white fish fillets (such as tilapia or cod)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1 tbsp olive oil
- 8 small flour tortillas
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeno, seeded and minced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
- Optional toppings: shredded cabbage, avocado, sour cream
Instructions:
- Preheat oven to 375°F. Season fish fillets with chili powder, cumin, garlic powder, and salt on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add fish fillets and cook for 3-4 minutes on each side, until fully cooked. Remove from heat and let cool for a few minutes. Once cooled, flake the fish into small pieces with a fork.
- Place tortillas on a baking sheet and warm in the oven for 2-3 minutes.
- To make the mango salsa, mix together diced mango, red onion, jalapeno, cilantro, lime juice, and salt and pepper to taste.
- To assemble tacos, place some flaked fish on each warmed tortilla. Top with mango salsa and any desired toppings.
- Serve immediately and enjoy!
