Fish Tacos
Ingredients:
- 1 pound white fish, cut into small pieces
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 8 corn tortillas
- 1 avocado, sliced
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges, for serving
- Additional toppings of your choice: shredded cheese, salsa, hot sauce, etc.
Instructions:
- In a small bowl, mix together olive oil, chili powder, cumin, salt, and pepper. Add the fish and toss to coat.
- Heat a large skillet over medium-high heat and add the fish. Cook for 3-4 minutes, until fish is cooked through and flaky. Remove from heat and set aside.
- Heat corn tortillas in the same skillet over medium heat, about 30 seconds on each side.
- To assemble tacos, place a few pieces of fish on a corn tortilla, top with avocado, red onion, tomatoes, and cilantro. Squeeze a lime wedge over the top and add any additional toppings of your choice.
