Fish Stew

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add onion and garlic and cook until softened, about 3 minutes.
  3. Add red bell pepper and cook for an additional 2-3 minutes.
  4. Add tomatoes, broth, oregano, thyme, salt, and pepper. Stir to combine.
  5. Bring stew to a simmer, then add fish chunks. Cover and cook for 5-7 minutes, or until fish is cooked through.
  6. Serve hot, garnished with fresh parsley, if desired.
