Fish Curry
Ingredients:
- 1 lb fish (any white fish will do)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 can diced tomatoes
- 1 cup coconut milk
- 1/2 cup water
- Salt to taste
- Cilantro for garnish
Instructions:
- Start by cleaning and filleting the fish. Cut into bite-sized pieces and set aside.
- In a large pot, heat some oil over medium heat.
- Add in the onions, garlic, and ginger and sauté until onions are translucent.
- Add in the coriander, cumin, turmeric, and red chili powders and sauté for another minute.
- Add in the diced tomatoes and cook for a few minutes until the tomatoes are softened.
- Add in the coconut milk, water, and salt to taste. Bring to a simmer.
- Carefully add in the fish pieces and mix gently, making sure all the pieces are covered in the sauce.
- Cover the pot and let it simmer for about 10 minutes or until the fish is fully cooked.
- Garnish with cilantro and serve hot with rice or naan bread.
