Fish Curry

  1. Start by cleaning and filleting the fish. Cut into bite-sized pieces and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add in the onions, garlic, and ginger and sauté until onions are translucent.
  4. Add in the coriander, cumin, turmeric, and red chili powders and sauté for another minute.
  5. Add in the diced tomatoes and cook for a few minutes until the tomatoes are softened.
  6. Add in the coconut milk, water, and salt to taste. Bring to a simmer.
  7. Carefully add in the fish pieces and mix gently, making sure all the pieces are covered in the sauce.
  8. Cover the pot and let it simmer for about 10 minutes or until the fish is fully cooked.
  9. Garnish with cilantro and serve hot with rice or naan bread.
