Fig Newtons
Ingredients:
- 1 cup dried figs
- 1/2 cup water
- 1/4 cup sugar
- 1 tsp lemon juice
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
Instructions:
- In a medium saucepan, combine the dried figs, water, sugar, and lemon juice. Bring to a boil over medium heat, then reduce heat to low and simmer for 10 minutes.
- Remove from heat and let cool for 5 minutes. Transfer mixture to a food processor and blend until smooth. Set aside to cool completely.
- In a separate bowl, combine the flour, baking powder, and salt.
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
- Divide the dough in half and shape each half into a rectangular log. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
- On a floured surface, roll out one of the dough logs into a large rectangle. Spread half of the fig mixture onto the dough, leaving a small border around the edges.
- Roll up the dough, jelly roll style, and gently press the edges to seal.
