Fig Newtons

  1. In a medium saucepan, combine the dried figs, water, sugar, and lemon juice. Bring to a boil over medium heat, then reduce heat to low and simmer for 10 minutes.
  2. Remove from heat and let cool for 5 minutes. Transfer mixture to a food processor and blend until smooth. Set aside to cool completely.
  3. In a separate bowl, combine the flour, baking powder, and salt.
  4. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
  6. Divide the dough in half and shape each half into a rectangular log. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  7. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
  8. On a floured surface, roll out one of the dough logs into a large rectangle. Spread half of the fig mixture onto the dough, leaving a small border around the edges.
  9. Roll up the dough, jelly roll style, and gently press the edges to seal.
