Fettuccine Carbonara
Ingredients:
- 1 pound fettuccine pasta
- 6 slices bacon, chopped
- 4 cloves garlic, minced
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions:
- In a large pot, cook the fettuccine according to package instructions. Drain and set aside.
- In a separate pan, cook the chopped bacon until crispy. Remove from pan and place on a paper towel to drain excess grease.
- In the same pan, sauté the minced garlic in the remaining bacon grease for 1-2 minutes. Remove from heat.
- In a small bowl, beat together the eggs, Parmesan cheese, heavy cream, and salt and pepper.
- Add the cooked pasta to the pan with the garlic and toss to combine. Pour the egg mixture over the pasta and continue to toss until the mixture thickens and coats the pasta.
- Stir in the cooked bacon and serve hot, garnished with chopped parsley if desired.
