Fava Bean Salad
Ingredients:
- 1 pound fresh fava beans
- 1 red bell pepper, seeded and diced
- 1 small red onion, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Bring a pot of water to boil and blanch the fava beans for 1 minute. Drain and rinse with cold water. Remove the beans from their shells and place in a large bowl.
- Add the bell pepper, red onion, feta cheese, parsley, and mint to the bowl with the fava beans.
- In a small mixing bowl, whisk together the olive oil, red wine vinegar, garlic, salt, and pepper. pour the dressing over the bean mixture and toss to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
- Serve chilled and enjoy!
