Fava Bean Salad

  1. Bring a pot of water to boil and blanch the fava beans for 1 minute. Drain and rinse with cold water. Remove the beans from their shells and place in a large bowl.
  2. Add the bell pepper, red onion, feta cheese, parsley, and mint to the bowl with the fava beans.
  3. In a small mixing bowl, whisk together the olive oil, red wine vinegar, garlic, salt, and pepper. pour the dressing over the bean mixture and toss to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  5. Serve chilled and enjoy!
