Farro Salad

  1. In a medium-sized saucepan, combine farro with 2 cups of water. Bring to a boil then reduce heat and simmer for about 20 minutes, or until the farro is tender but still has a bit of chewiness. Drain off any excess water and let cool.
  2. In a large bowl, combine the cooked farro, cherry tomatoes, red onion, cucumber, bell pepper, feta cheese, and herbs.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour over the salad and toss until everything is evenly coated.
  4. Serve immediately or refrigerate until ready to serve, allowing the flavors to develop. Enjoy!
