Farro Salad
Ingredients:
- 1 cup farro
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cucumber, diced
- 1/4 cup bell pepper, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh herbs (such as parsley, basil, or dill), chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper, to taste
Instructions:
- In a medium-sized saucepan, combine farro with 2 cups of water. Bring to a boil then reduce heat and simmer for about 20 minutes, or until the farro is tender but still has a bit of chewiness. Drain off any excess water and let cool.
- In a large bowl, combine the cooked farro, cherry tomatoes, red onion, cucumber, bell pepper, feta cheese, and herbs.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour over the salad and toss until everything is evenly coated.
- Serve immediately or refrigerate until ready to serve, allowing the flavors to develop. Enjoy!
