Falafel Recipe
Ingredients:
- 1 cup dried chickpeas
- 1 onion, chopped
- 1/2 cup fresh parsley
- 4 cloves garlic
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon baking soda
- 4 tablespoons all-purpose flour
- Oil for frying
Instructions:
- In a deep bowl, soak the chickpeas in water for at least 12 hours or overnight. Drain and rinse the chickpeas.
- In a food processor, combine the chickpeas, onion, parsley, garlic, salt, cumin, coriander, black pepper, cayenne pepper, baking soda, and flour. Pulse until the mixture becomes a coarse paste.
- Transfer the mixture to a bowl and allow it to rest for 30 minutes. This will allow the flavors to develop and the mixture to firm up.
- In a deep frying pan, heat the oil to 375°F (190°C).
- Shape the falafel mixture into small balls, about 1 inch in diameter. If the mixture is too wet, add a bit more flour to bind it.
- Carefully drop the falafel balls into the hot oil and fry until they are golden brown and crispy, about 3-4 minutes. Remove from the oil and drain on a paper towel-lined plate.
